CHINESE MEETS SOUTH INDIAN FRIED RICE

Namaskara Earthlings! Or Shall I say Nama-Slay people of the Earth! 



As usual, with bare minimum ingredients in my fridge and left over rice, I present to you, this multilingual fried rice! 😎 Its sweet, spicy and everything nice - nice enough to create a power puff girl out of it!!

Let's get to it!
Ingredients: (ignore the mess on the right)


Rice - This is fried rice , so yeah, you need at least a bowl of pre cooked rice. 
Desiccated coconut /coconut flakes
1 tomato
1 red onion 
Spring onions
6-7 cloves Garlic (always, keeping them vampires at bay!) 
Cashews
Green chillies - I've used about 2 of them for this recipe
Chinese mixed herb seasoning (I have the one from Keya)
Regular cooking oil 
1 tbsp of soy sauce
Salt to taste

Recipe:

Start prepping for the dish by finely dicing all the vegetables. Wait a minute! First of all please get your swag mode on for this fantastically awesome union of China and South of India!

Fire up your wok/pan , add 2 tbsp of oil and stir fry the garlic and the cashews till they're nice and brown. Once they've turned a nice shade of Indian like me, take them out and keep them aside. 
Add some more oil, stir fry the rest of the vegetables. Start with the green chillies , then add the onion, fry it for a bit till it turns translucent. At this point bring in the chinese-seasoning and salt, add some soy sauce if you like. 
Add the chopped tomatoes, stir fry it till it becomes a little tender. At this point, add the rice (pre cooked rice) , the spring onion and steam for about 2-3 minutes till the rice absorbs the flavour of the vegetables. 
Garnish with the fried cashews and garlic and coconut flakes.
There you have it! Sweet-Spicy and its best devoured alone or as the main dish. Just like me!😅
