SUNDAY PANCAKES & LEMON HONEY SYRUP
Namaskara Earthlings! Or Shall I say Nama-Slay people of the Earth!
Its a beautiful Sunday and I literally woke up with the recipe on my mind (Not in the literal sense off course! Didn't wake up to a note stuck to my forehead. No!)
Spice Woman saves your Sunday with this awesome Pancake recipe, ooooh oooh....! & the lemon honey syrup with a touch of heat.
Because maple syrup is too main stream. 😝

With the ice pack on my thumb, without further ado, swag in the air, sexy hair flip coming, I present to you, my Sunday Special!
LEMON SYRUP:
Ingredients:
The juice of 1 lemon (Duhh....!)
4-5 table spoons of honey
4 tbsps of water
Cinnamon and finely powdered pepper (you can use red chilli powder if you like too!)
Recipe:
Add the lemon juice , water and honey in a pan and boil away (swirling the pan occasionally - do not stir with spoon, just move the pan around lightly). We need to boil till the syrup reduces to 25% of its original volume. At this point you add the cinnamon and the pepper to the mix, swirl away till its all nicely incorporated. Turn the heat off. Don't let it burn.
Please note: The syrup starts bubbling and rising up- thats when you'll know its done.
PANCAKES:
Ingredients:
1 cup whole wheat flour ( sieve this to remove any granular particles)
1- 1.5 cups of Milk
Salt (just a pinch)
1- 1.5 table spoons of baking soda
1 egg - (this depends on the size of the cup you are using - for Groot size cups 1 egg will do, for Hulk sized cups 2 eggs will do )
Butter (I used unsalted butter) or Ghee
A Pan - cos' well...., you need a pan....... for PAN- Cakes - get it ?! (That was funny, I know it was!)
Recipe:
Mix all the dry ingredients together , add the egg and then the milk - mix well with a fork or a whisk.
You need the batter to be runny ( a little thinner than a cake batter - more like the Indian dosa batter), add more milk if you feel the need.
Make sure the pan is nice and hot before you pour the batter in. Add butter/ghee to your fancy. Pour in small scoops of the pancake batter- because the batter will spread on the pan and form unique shapes that you won't recognise as pancakes! This happened to me, please learn from my mistakes, I know I won't 😶
Once the pancakes are nice and brown - not burnt, don't burn them! 💥Fluffy Pancakes are ready to eat! Serve with a small dollop of butter or if you have whipped cream add that. Pour in the syrup!
