Lemon Yoghurt Cake - Where I get my love handles from......
Namaskara Earthlings! Or Shall I say Nama-Slay people of the Earth!
Long time no write, Spice Woman is back. This time I bring you some healthy and some indulgent recipes (like this one here) to brighten up the valentine month! There is nothing better than making something for your loved ones , nothing better than food for sure! So, Mortals! I urge you to try your hand at these recipes I am going to post every day. So show yourself and your loved one some good lovin' !
This is the simplest and the quickest cakes I have ever baked! Its a great cake as a base cake, I topped mine with some home made strawberry puree (again just took me like 5 nano seconds to make)!
You don't need no fancy equipment to make this one and if you are a beginner its the easiest cake to try baking with.
Let's go!
Ingredients:
- 165 gms Flour ( I have used India's most trusted Ashirwad atta 😆- whole wheat flour basically)
- 30 gms of ground cashews (just blend regular dry cashews to make a fine powder)
- 2 tsp baking powder (we need da fluff!)
- 1/4 tsp pinch of salt
- Zest of outer lemon (this is the tricky part - I used 2 regular Indian lemons - slightly grated them and added it to the dry mix)
- Instead of the zest -Optional - 2 tsps of lemon flavoured tang (for all you fancy peeps!)
- 2 large eggs at room temperature
- 180 ml - greek yoghurt (regular yoghurt that has been strained to take out the excess water)
- 150 gms granulated sugar (regular sugar blended into powder)
- 1tsp vanilla extract (or essence)
- 110 ml flavourless oil (I used my trusty 'Saffola' vegetable oil )
Oven - duhh 😆
8 inch (20 cm ) round cake tin
2 bowls
Measuring bowls / weight machine - something of that sort.
Giant thug like whisk and spoon to mix
Parchment paper for lining the cake tin
Extra flour for coating the cake tin
Lots of love faith hope strength and every nice.
Recipe:
First , you need to oil or grease the baking tin and then dust it with fairy dust so your cake comes out nice and sparkly and unicorns will be prancing around waiting for the cake to get done in the oven.
Okay thats not going to happen really, just dust your tin with regular flour and tap off the excess - yes spank that tin nicely 😎
And then line your baking tin with parchment paper ( I will be putting up a video when I have mastered the art of neatly lining a tin 😓)
Thats out of the way!
Assemble your dry ingredients like you were about to go on a mission, measure them correctly and don't you dare blink an eye lid!
Okay human, you can breathe now.
Add the lemon zest or the tang powder to the dry mix and keep aside to chill like a friggin villain. When you grate the lemon, just get the yellow part not the white part - white part makes it bitter. If you are a little dicy about this, just use tang.
In another bowl, take the eggs, whisk them to sort of make a smooth paste, add the sugar - mix it well.
Now add the yoghurt and mix again, add the oil, mix again, add the vanilla essence and blood sweat and tears you want to put into this cake, and mix again! Don't forget to hug the bowl and show some love.

You got this, don't give up yet, we've got one more step.
Take the wet mix and slowly add it to the dry mix and fold it in. By fold, I mean gently mix the wet ingredients with the dry like your life depended on it. Gentle but quick.
Oh wait...! You gotta pre heat your oven before you start making the cake - at 180 C / 350 F for about 15 minutes. Dammit. And you will also be baking it at 180 C / 350 F
So..... I have a convection cum microwave and I use the setting available on it for a sponge cake. Every oven is different, baking times will vary. Don't blame me if you screw up your cake man! Just saying 😐
You gotta keep an eye on the oven check after 20 minutes with a knife or a toothpick to see if it comes out clean. If it comes out clean, take it out of the oven. Let it cool for an hour before you can feast!
Serve with strawberry puree ( which is basically chopped /blitzed strawberries boiled in a little bit of water for 5 mins, add some honey or sugar and mint leaves- let it cool!)
